Woolworths Cheesecake Recipe

Here’s a classic recipe inspired by the Woolworths cheesecake that you can try at home:

### Ingredients:
– **200g** digestive biscuits, crushed
– **100g** butter, melted
– **300g** cream cheese, softened
– **100g** granulated sugar
– **1 tsp** vanilla extract
– **300ml** double cream
– **1 tbsp** gelatine powder (optional, for setting)
– **2 tbsp** warm water (if using gelatine)
– **Fresh fruits** or fruit compote for topping

### Base Preparation:
1. **Mix** the crushed biscuits with the melted butter until well combined.
2. **Press** this mixture into the bottom of a springform pan to form a compact base. Chill in the refrigerator for about 30 minutes to set.

### Filling:
1. **Dissolve** the gelatine in warm water, if using, and set aside to cool slightly.
2. **Beat** the cream cheese with sugar and vanilla extract in a bowl until smooth.
3. **Incorporate** the double cream and beat until the mixture is creamy and thick. If you’re using gelatine, add it to the mixture now.
4. **Pour** the cream cheese mixture over the biscuit base and smooth the top with a spatula.
5. **Refrigerate** the cheesecake for at least 4 hours, or overnight for best results.

### Topping:
1. Just before serving, **decorate** the cheesecake with your choice of fresh fruits or a fruit compote.

This recipe gives you a deliciously creamy cheesecake that’s perfect for any occasion! If you don’t want to use gelatine, the cheesecake will still set nicely but may be a bit softer in texture. Enjoy your homemade treat!
